IP Australia, the Australian Government patent authority has recently granted and sealed a Standard Patent (No 2005252264) to Memstar Pty Ltd for its invention: "Alcohol Reduction in Beverages".
Laboratory trials can now be done to determine alcohol and wine concentration sweet spots, and processing requirements for taint reduction. Micro AA is the bench-top Memstar system designed just for this.
High sugars, high VA, high alcohol and stuck ferments are a major challenge to winemakers. Memstar have successfully treated these problems in the past but over this vintage, conditions were such that the problems are the worst we have seen.
Seminars are to be held in Margaret River and Swan Valley during May, and will feature David Wollan and the Memstar team demonstrating the “sweet spot” concept for alcohol reduction, conducting free training and tastings. The complete range of mobile wine services will be introduced including the new Electrodialysis technique.
